These Raspberry Oatmeal breakfast Bars are gluten-free and vegan. Other then raw honey, there is no added sugar and the sweetness is from the banana in the base of the bars and the raspberries. For this reason, these breakfast bars are not as sweet as they appear but they make for an amazingly complete breakfast. I work out in the morning before heading to court so these also act as my post workout meal. I hope you enjoy.

Raspberry Oatmeal Breakfast Bars - Vegan and Gluten Free

A savory breakfast bar that is gluten-free and vegan. The only added sugar is from honey.
Banana Base
- 2 cups old fashioned oats
- 1 1/2 cup almonds
- 3 tablespoons raw organic honey
- 1 tablespoon melted coconut oil
- 1 1/2 teaspoon cinnamon
- 2 bananas
- 2 teaspoons vanilla
Topping
- 1/2 cup old fashioned oats
- 1/4 cup slivered almonds
- 1/4 cup pepita seeds
- 3 tbsp sesame seeds
- 1/2 cup coconut shavings
- 1 cup fresh raspberries
- 1/4 cup of coconut-almond milk (or plain coconut or plain almond milk)
Base
- Preheat oven to 350°.
- Line baking pan with parchment paper, lightly grease with pam
- Add all base ingredients to food processor and pulse until completely combined and wet
- Pour into pan and use back end of a spoon to evenly spread.
- Bake for 10 minutes.
- While the base is baking, Combine topping ingredients in medium bowl and stir to combine.
- Remove pan from oven, spread topping evenly over the base and lightly press down.
- Bake an additional 15 minutes
- allow to cool for 30 minutes before cutting
Notes
- When I make these breakfast bars my post workout snack, I add some chocolate or vanilla protein powder to the base.
