This Instant Pot bison chili recipe is lean, healthy, and extremely flavorful. I used to make this recipe in my slow cooker, but ever since my sister bought me an Instant Pot last Christmas I have been cooking it using the Instant Pot pressure cooker function. I personally think it comes out just as flavorful with a 14 minute pressure cook in my Instant pot compared to 6-8 hours in my slow cooker. My bison chili is dairy-free and gluten-free.
I choose bison over beef for several reasons. The most obvious being that Bison is naturally more lean and has a higher amount of protein than beef. It is also higher in B vitamins than beef as well as copper, potassium, and zinc. It also has been reported to be more heart healthy than beef. But looking beyond the health benefits, Bison is the more ethical choice when it comes to red meat. All bison are pasture-raised and spend their entire lives on pasture.
